Havilah
Ask a Tasmanian chef or restaurateur where they like to go when visiting Launceston, and most of them will mention this discreet and produce-focused wine bar in the center of town. The wines are the major lure here, whether from the owners' own Havilah or Two Tonnes labels or farther afield. The menu is led by whatever local ingredients are in season (typical of Launceston, which is a UNESCO City of Gastronomy), and the produce is allowed to shine with minimal fuss or flourish. You can also take home bottles to enjoy at your accommodation.
