The kitchen uses ingredients foraged from the lush resort garden in such artful, healthy dinner creations as crisp-skinned wild salmon with onion-port jam, dandelion greens, salsify-chevre-quinoa cakes, and walnuts; and Thai green curry with local spot prawns.
