The Tasman

Nowhere blends modern luxuries with sympathetic period details like The Tasman—a member of Marriott Bonvoy's Luxury Collection, it comprises three separate buildings: an art deco wing, a 19th-century heritage wing (part of which was a former hospital), and a brand-new pavilion section. Each building has its own look and feel, with pluses and minuses for both. For grandiose ceilings and only-in-Tasmania detail including a fabulous wooden bath in one suite it's all about the Heritage wing. For sweeping harbor views, the Pavilion is the best bet. But the best parts are beyond the bedrooms, such as the clubby Mary Mary bar with its strong focus on Tasmanian whiskies and wines, and the foliage-filled Italian restaurant Peppina, which is famous for its wood-fired polpette (meatballs) and fresh-made pasta.

This complex comprises a charming residence built in the 1880s for Alfred Crisp, a wealthy timber merchant who later became Lord Mayor of Hobart, as well as two pavilions and three lovingly restored outbuildings in which each of the accommodations are located—these include a gardener's residence, servants' quarters, and coach house. All have been respectfully converted into delightful self-contained cottages filled with period antiques. In addition, there are two elegant period houses in other areas of the city. Together, they are some of the most atmospheric accommodations in Hobart.

Right on the Hobart waterfront, this row of historic warehouses and a former jam factory have been transformed into a sensational, art-theme hotel, where the work of Tasmania's finest contemporary artists is displayed. The friendly full-time curator is on hand to advise and explain, as is the in-house historian; together they run art-history tours of the hotel complex. The spacious guest suites, also artistically decorated, reflect the influences of a rich colonial trading history with India and China: all suites have natural wood furnishings and king-size beds with exotic silk covers. Bathrooms are modern, with stainless-steel and translucent-glass fittings. Some suites have harbor views; others overlook the stunning glassed-in courtyard atrium.

Despite being part of a big global brand—Ibis Styles falls under the Marriott umbrella—Hobart's Ibis Styles hotel feels surprisingly bespoke. Rooms and common areas include bright bold art, and the colorful ground floor Mr Good Guy restaurant is a fun place to grab a bite. Staff are friendly and attentive and it's an easy walk to the city's big attractions. The top floor rooms have gorgeous views of kunanyi/Mt. Wellington. Rooms are compact but if you're planning to spend more time outside your hotel than inside it's a great value option.
